NO BAKE CINNAMON & CRANBERRY ENERGY BARS

INGREDIENTS

- 125 grams (1/2 cup) peanut butter (unsalted)
 - 5 tablespoons honey
 - 112 grams (1 1/4 cups) rolled oats
 - 60 grams (1/2 cup) dried cranberries
 - 2 teaspoons ground cinnamon
 - Salt to season as desired
 
PREPARATION
- Melt the peanut butter in a saucepan over low heat or in a microwave.
 - Add the honey and mix until smooth.
 - Add the cranberries, ground cinnamon and salt to taste.
 - Stir in the oats and combine thoroughly.
 - Line a deep baking tray with plastic wrap.
 - Pack the mixture into the tray to a depth of approximately 2cm (3/4 inch).
 - Place in a refrigerator for 30 minutes or until set.
 - Remove mixture from the tray and peel off the plastic wrap.
 - Cut into bars of desired width and length.
 
STORAGE
- Store in an airtight container in the refrigerator for up to 2 weeks
 - Freeze for up to 3 months.
